Introducing the Matzoffle: A Passover Breakfast treat.
As previously mentioned, I have recently gotten a waffle maker. To justify buying it, I have decided to use it as much as possible! As it is Passover, and I have tons of extra matzo, I wondered: Can one make a Matzo waffle that tastes good?
Taking the concept from a traditional Passover staple, Matzo brei, I thought to create a french-toast like batter, and soak the matzo in it before cooking it in the waffle machine. And it turned out great!
Although I made a sweet version, with nutmeg and cinnamon, you can create a savory version.
My recommended pairings:
Sweet: Bananas and other fresh fruit and berries, syrup, chocolate syrup, brown cheese, jam, sour cream
Savory: Sour cream, chive, cheese, bacon or other salty meats.
Really, just serve with your favorite waffle accoutrements.
The recipe below is for two Norwegian-sized waffles, but can be adjusted.
Can one make a Matzo waffle that tastes good?

Preheat your waffle iron, following instructions on your manufacturer's manual.
In a medium-sized bowl, blend together eggs, milk, salt, and vanilla, nutmeg, and cinnamon, if you are using them.
Take the matzo and break it into small, 2 inch or 5 cm pieces.
Crush and crumble the matzo with your hands, into the bowl.
(Alternatively, you can use a rolling pin and place the matzohs in a plastic bag to grind them, or use a food processor.)
Blend together the matzo and the wet mixture until the matzoh is coated. Any larger pieces of matzo can be crushed with a fork to make them smaller at this stage.
Let the matzo soak in the batter for at least 10 minutes, stirring halfway through, to make sure everything gets coated. This allows the matzo to soften and absorb the flavor of the egg mixture.
Use nonstick spray on your waffle iron, distributing it evenly.
Evenly spread half the mixture through the waffle maker. Because it is not fluid, it will not spread very much, so manually distribute it around.
Cook waffle until golden brown using the specifications unique to your waffle iron manufacturer. Top with your favorite toppings and enjoy!
